PEA PROTEIN SMOOTHIE
High- Protein smoothie, filling and highly nutritious!
Undoubtedly, it's comfort food, aka food for the soul. A bite of it, along with a little good coffee, can give you the warmth and energy you need to start your day.
The good news is that now most of our favorite desserts have a healthier version, which you can enjoy without guilt, like this particular cake made with erythritol.
? A few words about erythritol:
Erythritol is a natural, calorie-free sweetener. This particular erythritol is produced in Europe from organic corn (non-GMO!).
The uniqueness of this sugar substitute is that the body does not recognize it as sugar, and it is not metabolized by the body. It has the advantage of having a zero glycemic index. It does not affect blood sugar levels and is suitable for diabetics.
Unlike other polyols, erythritol is non-caloric. Due to its small molecular size, 90% of the erythritol consumed is absorbed in the small intestine, but while it is absorbed well, it is not metabolized in the body. The kidneys remove erythritol from the bloodstream, and it is excreted unchanged in the urine.
✍ Ingredients:
3/4 cup butter, room temperature
1 cup + 3/4 erythritol
4 eggs
3/4 cup almond milk
3/4 cup yogurt
1 tsp vanilla extract
1 cup raw cocoa
3 cups almond flour
1 tbsp baking powder

In a bowl, beat the erythritol with the butter until fluffy.
Add the eggs one at a time, then add the milk, yogurt, and vanilla. Mix well to combine the ingredients.
Next, add the flour, baking powder, and cocoa. Mix thoroughly.
Grease or butter a 20 cm springform pan and pour in the mixture.
Bake in a preheated oven at 180°C (350°F) for about 40 to 50 minutes. Do the toothpick test to check if it's ready.
Remove from the oven and let it stand for at least 20 minutes. Unmold the cake and let it cool completely on a rack. It turns out moist as if you’ve added syrup.
If you want to add a glaze... In a small saucepan, heat 2 tablespoons of butter with dark or milk chocolate.
Once melted, remove from heat and add one sifted cup of powdered sugar. Stir well to combine. Gradually dilute the mixture with hot water, a little at a time, until it reaches the desired consistency. Immediately pour the glaze over the cake.
